MED 500X2 jukebox mp3 only

I have been using an Apple TV with a 160 GB as a jukebox. Fill 160 GB with mp3 files and play the music, often in shuffle mode. No need to have a PC switched on as this Apple TV can be used as stand alone.
Recently I purchased a MED500X2 with 2TB disk to replace the Apple TV.
Like with the Apple TV, I want to fill the disk of the MED500X2 with mp3 files and use it as a stand alone unit.

At this time I have some 50,000 mp3 files, total approx. 260Gb, and the number is still growing.
Each artist is in a separate folder and each album is in a separate sub folder. This sub folder contains the mp3 files and the album art sleeve as jpg file. This folder can contain multiple album art images for the same album, for example when an album was released with different art images. To avoid conflicts, the MED500X2 should use the album art images that are imbedded in the mp3 files and ignore the jpg files in the folders.

How do I set up the MED500X2?
