Is this regarding a 400X or 500X?
These mentioned folders are not created by the mede8er I am almost sure....

The folders that are showing on the mede8er are;

$recycle
recycler
System Volume information

I have connected the HD to another PC and there are no folders/files showing either. I have only 2 different PC's available to me. One is XP , the other is Vista.
 Please help if possible.

This folders are created by a PC (windows recycle bin).

In windows explorer turn hidden files on under folder options and you will see them also.
You can also turn of recycle bin for specific drive letters if you don't want to have those folders created by windows.

How do I turn off recycle bin for specific drives?.. Also, how do I delete these folders without them returning?( Really need help with this as I am not that good with PC)

Do you have win7 or Vista?
Right click on your Trashcan on your desktop. Choose properties and you can set it.

I have managed to delete/remove recycler folders by changing the properties using XP.
I still have System Volume Information folder showing and does not want to delete.

I have another PC that is Vista. The hardrive has been connected to both PC's.

( I find it strange that other connected external hardrives did not have this problem )

I created a new folder and put all my files in that ( not SVI folder or recylcer etc)...pointed the mede8er to the new folder and  it works great.
